First thing he cut was an onion. He was amazed by how smoothly the blade cut through it. It's been a month and he will still randomly call out to me from the kitchen to tell me how amazingly sharp they are!

Other than the very sharp blades the big thing that made the difference for me was the handle, grip and shape of the blade near the grip. Most blades are square these have a rounded area that is easier on your forefingers especially if you like to use your use index knuckle and thumb to hold the back of the blade on some types of chop tasks. ( I call it pinching the blade) if you know what I mean. Not a pro chef so not sure if there is chef-like term for when you slide your had up the grip to pinch the back of the blade. Super comfortable and easy on the hand.
